Great Venison Recipes: Deer Chili

In a frying pan, cook bacon until crisp, remove meat, add the venison and brown it. Remove the venison (placing in a large cooking pot with a lid) and add onions, mushrooms, garlic, and peppers and brown in the pan, stirring occasionally.
Add the vegetables (including the can of tomatoes) and all seasonings to the cooking pot, along with fried bacon pieces, cover and simmer at low heat for 90 minutes. Add the beans, cook another half hour. It’s better the second and third time it’s served, as refrigerating and reheating melds flavors.
3 pounds ground venison
6 slices bacon
2 large onions, sliced or diced
6 mushrooms, chopped
2 garlic cloves, chopped
1 large green pepper, diced
1 large can whole tomatoes (28 ounces)
1/2 teaspoon oregano
2 tablespoons chili powder
1 teaspoon pepper
1 teaspoon Lawry’s Season Salt
1 large can kidney beans
1 large can pinto beans
